The Importance of Vitamin K for a Healthy Diet

Vitamin K is a fat-soluble vitamin that plays important roles in blood clotting and in bone metabolism. Sharon Collison, a registered dietitian and instructor of Clinical Nutrition at the University of Delaware, has over 30 years of experience looking at nutrition, diets and diet culture. She has studied the affects of vitamin K and the impact it can have on one's overall health.  She notes that vitamin K decreases bone turnover, protecting against fractures. Vitamin K is unique in that bacteria in the GI tract can synthesize vitamin K that can contribute to the body’s needs. People generally get about ½ their vitamin K from synthesis in the GI tract and ½ from food sources. Here are some foods that Collison said are not only good sources of vitamin K, but are nutritional powerhouse foods that are nutrient dense. Broccoli Raab: 241 mcg/100 grams of vitamin K. Also high in dietary fiber, potassium and vitamin C.  Artichokes: 14.8 mcg/100 grams vitamin K. Also an excellent source of dietary fiber and potassium.  Broccoli: 102 mcg/100 grams vitamin K. Also high in vitamin C, beta carotene, dietary fiber, potassium, iron and phytonutrients — which has great cancer fighting properties. Spinach: Chopped frozen boiled spinach has 543 mcg/100 grams of vitamin K, making it one of the best sources. Also high in vitamin C, folate, potassium, vitamin A and magnesium.  Green leaf lettuce: 126 mcg/100 grams vitamin K. Also a good source of vitamin A and potassium, folate and very low in calories.  Canola oil: 10 mcg/1 Tbsp vitamin K. Also a good source of heart-healthy monounsaturated fats and vitamin E. Canned tuna in oil: 37 mcg/3 ounces vitamin K. Also rich in protein and heart healthy omega-3 fatty acids.  Eggs: Vitamin K content varies between 67-192 mcg per egg yolk depending on the hen’s diet. Also an excellent source of protein.  Arugula: 21 mcg/1 cup vitamin K. Also good source of potassium, vitamin C, folate, vitamin A and calcium.  Collison is affiliated with the National Alliance on Eating Disorder Awareness and Prevention. She has been a board-certified sports dietitian since 2008, providing sports nutrition guidance to middle-school, high-school, collegiate, elite and amateur athletes.

Kempton, associate director of vehicle-to-grid (V2G) technology for UD's Center for Research in Wind (CReW), pioneered technology for vehicle-to-grid (V2G) vehicles, which are capable of absorbing excess energy when demand for power is low and returning some back to the electric grid when the demand for power is high.

He simply looked around his classroom and saw his Gen Z students clicking through the app for low-priced, high-quality clothing that could get made and delivered with lightning speed. But through years of analysis of the fast fashion industry, Lu, associate professor of fashion and apparel studies at the University of Delaware, is well aware of the catch: the company has been accused of wasteful use of textile and employing questionable labor practices. He can discuss the impact of Shein and other fast fashion retailers as well as questions surrounding their success and business practices. Lu has also been working with traditional retailers to promote sustainable practices. Under his guidance, a group of UD graduates collaborated with leaders at Macy’s in sustainability, sourcing, product development, raw materials and design. The students' research, conducted during their senior year, aimed to identify the challenges and opportunities associated with the company's shift toward a more sustainable future. By focusing on expanding the use of recycled content in Macy’s private brands, the work reflects a shared commitment by both UD and Macy’s to drive positive change in the fashion industry.

Nicholas Petrelli, M.D., Receives Lifetime Achievement Award

Nicholas Petrelli, M.D., Bank of America Endowed Medical Director of ChristianaCare’s Helen F. Graham Cancer Center & Research Institute, has received the Lifetime Achievement Award from Tulane University School of Medicine in New Orleans, Louisiana. Petrelli is a 1973 graduate of the school. Dr. Petrelli, center, receives the Lifetime Achievement Award from Julius L. Levy, Jr., M.D., past president, Tulane Medical Alumni Association, left, and Lee Hamm, M.D., senior vice president & dean of the School of Medicine, and the James R. Doty Distinguished Professor and Chair, Tulane University School of Medicine, New Orleans, Louisiana. The award recognizes an alumnus of the school who has made significant contributions to the field of medicine and has offered outstanding leadership in the community. Under Petrelli’s leadership at ChristianaCare since 2001, the Helen F. Graham Cancer Center & Research Institute has become a national model for multidisciplinary cancer care and a top enroller in U.S. clinical research trials. The Graham Cancer Center is a National Cancer Institute Community Oncology Research Program and one of only five hybrid academic community cancer centers in the nation. Through the work of the Graham Cancer Center and partnerships with health care providers, community organizations and the state to improve the prevention, diagnosis and treatment of cancer, Delaware’s cancer mortality rate has dropped twice as fast as the national rate. In addition, the state is outpacing the nation in reducing deaths from a number of cancers. Delaware has gone from number one in cancer mortality 22 years ago to number 17 today. Petrelli has numerous achievements in cancer care and research. He has established several firsts for Delaware, including a multidisciplinary disease center site, the Cawley Center for Translational Cancer Research, a tissue procurement center, an adult genetic counseling program, a statewide high-risk family cancer registry consisting of more than 500,000 individuals and an innovative oncology express unit to provide patients with cancer a way to address urgent care needs without having to go to the emergency department. Among his accomplishments on the national level are the first primary care practice established at a cancer center and the first gene editing research program integrated into a community cancer center. Through a unique research partnership with the Ellen and Ronald Caplan Cancer Center of The Wistar Institute, he has brought cutting-edge cancer treatments and diagnostics to Delawareans. And in a ground-breaking collaboration among the government, community organizations and the Graham Cancer Center nearly 10 years ago, Delaware ended the disparity between Black and white people for colorectal cancer screenings and mortality, which continues to this day. Petrelli has received numerous awards and has authored 360 peer-reviewed manuscripts and 31 book chapters. He has served on advisory panels of the National Cancer Institute, the American Society of Clinical Oncology, the American Cancer Society and the Society of Surgical Oncology. He was president of the Society of Surgical Oncology from 2007 to 2008. In 2013 he received the Order of the First State Award, the highest honor in the state, from Delaware Gov. Jack Markell. In 2019 he received the James Tilton award (named for the first U.S. Army Surgeon General) from the Medical Society of Delaware.

Program addresses disparities in breast cancer between Black and white women ChristianaCare’s Helen F. Graham Cancer Center & Research Institute is partnering with Susan G. Komen®, the world’s leading breast cancer organization, in an expansion of Komen’s screening and diagnostics program to income-eligible residents of Delaware. Under the program, Delaware women who meet income qualifications will be able to access no-cost breast cancer screening mammograms and necessary diagnostic follow-up tests. Once approved by Susan G. Komen for care, they can select ChristianaCare for services. ChristianaCare is one of 20 health systems nationwide partnering with Susan G. Komen in the program, which seeks to reduce disparities in areas where the breast cancer mortality gap between Black and white women is the greatest. “The Graham Cancer Center is proud of its longstanding partnership with Susan G. Komen to bring breast cancer screenings to our community and to reduce disparities and save lives,” said Nicholas Petrelli, M.D., Bank of America endowed medical director of the Helen F. Graham Cancer Center & Research Institute. “This new partnership with Komen is an innovative way that we are stronger together as we continue to reduce barriers to care and help more Delaware women access timely breast imaging and treatment,” he said. “The screening and diagnostics program is critical for individuals who may have been putting off their breast cancer screening due to concerns about cost,” said Nora Katurakes, RN, OCN, manager of the Graham Cancer Center’s Community Outreach & Education program. “Early detection saves lives, and cost should not be a barrier to accessing high-quality health care services for anyone in need. In addition, Black women in Delaware have among the highest incidence rates in the U.S. of triple negative breast cancer, an aggressive form of the disease that is harder to treat and more likely to return. The Komen screening and diagnostics program is a service provided through the Komen Patient Care Center. Last year, Susan G. Komen provided nearly 3,000 screening and diagnostics services. Komen hopes to serve another 3,000 individuals in 2023. To be eligible for the program, individuals must have a current annual household income at or below 300% of the Federal Poverty Level. For one person that is $43,740. A two-person family must have a $59,160 household income to be eligible. The Tatiana Copeland Breast Center at the Helen F. Graham Cancer Center & Research Institute is one of the few facilities in the region devoted exclusively to breast care, diagnosis and treatment, and was the first center in the state to offer high-definition 3D mammography imaging. About Breast Cancer Screening Screening mammography tests are used to find breast cancer before it causes any warning signs or symptoms. Regular screening tests along with follow-up tests and treatment, if diagnosed, reduce an individual’s chance of dying from breast cancer. Mammography is a test that uses X-rays to create images of the breast. These images are called mammograms. A radiologist trained to read mammograms studies the images and looks for signs of breast cancer. A mammogram may show: No signs of breast cancer. A benign (not cancer) condition or other change that does not suggest cancer. An abnormal finding that needs follow-up tests to rule out cancer. Gene Editing Institute’s Amanda Hewes Selected as a 2023 Outstanding Delaware Woman in STEM by Million Women Mentors

Amanda Hewes, MS, education program manager at ChristianaCare’s Gene Editing Institute, has been named one of the 2023 Outstanding Delaware Women in STEM by Million Women Mentors, an international movement dedicated to encouraging girls and women to pursue careers in science, technology, engineering and math (STEM). Hewes’ selection spotlights her dedication to engaging young people in the science of gene editing by introducing the Gene Editing Institute’s CRISPR in a BoxTM educational toolkit into classrooms across Delaware and her commitment to bridging disparities in STEM education. “I’m overjoyed to be honored among so many amazing women in this state,” Hewes said. “It’s humbling to be considered and to stand alongside them. All of these women foster and lead dynamic communities of young women that inspire me every day. I hope that I can do the same by making young women in this state feel empowered through the work that I do.” Hewes joined ChristianaCare’s Gene Editing Institute in 2017 with a focus on expanding its CRISPR gene editing system in a cell-free environment. She was first author in a publication in Nature that established the highly innovative “gene editing on a chip” protocol that allowed CRISPR to edit DNA outside of the cell for the first time. This methodology enables researchers to take fragments of DNA extracted from human cells, place them in a test tube and precisely engineer multiple changes to the genetic code. This gene editing system eventually led to the creation of the CRISPR in a Box™ toolkit. This innovative educational resource provides a way for students to learn about this exciting frontier of science through a hands-on exercise in which they use CRISPR gene editing to disrupt a synthetic gene within a plasmid. The simplicity of this experiment allowed for the reaction to be developed into a remarkable teaching tool that can be brought into most school laboratories containing basic laboratory equipment. Once CRISPR in a Box™ was developed, Hewes recognized the potential it could have for high school and college students. She took on a new role as education program manager and expanded the Gene Editing 360™ platform, which is the Gene Editing Institute’s suite of educational tools for engaging students and the public. “Amanda has set us on a tremendous path toward providing more educational opportunities for Delaware students,” said Eric Kmiec, Ph.D., director of ChristianaCare’s Gene Editing Institute. “She’s inspired young women in multiple states and has created so much of this program with her own ingenuity and passion.” Hewes was honored alongside 10 other women by Gov. Gene Editing Institute Opens a Unique Learning Lab for High School and College Students

Free program uses CRISPR in a Box™ toolkit to teach the power of gene editing To inspire the next generation of students to pursue careers in STEM (science, technology, engineering and math) and learn about the power of genomic science, ChristianaCare’s Gene Editing Institute has launched a new Learning Lab on its premises that offers educational programming about revolutionary CRISPR gene editing technology. Located next to the Gene Editing Institute’s lab on the University of Delaware’s STAR Campus, the Learning Lab is a physical space that provides an immersive field trip experience for upper-level high school students and college undergraduates who may not have access at their schools to a laboratory to conduct gene editing experiments. There is no cost for schools to use the lab or for the materials to conduct the experiment. The Gene Editing Institute wants to ensure that all schools have equal opportunity to participate in educational programming at the lab. Students using the lab can perform a gene editing experiment in a single day using the Gene Editing Institute’s innovative CRISPR in a Box™ educational toolkit. All materials in the kit are safe, synthetic materials, and allow students to perform CRISPR gene editing with non-infectious E. coli bacteria. They will be able to see an appearance change indicating gene editing has occurred at the end of their experiment. “Students around the country, no matter where they go to school, have the potential to be scientists, researchers and laboratory technicians,” said Eric Kmiec, Ph.D., executive director and chief scientific officer of ChristianaCare’s Gene Editing Institute. “Our hope is that by creating access and space for students to explore, we can inspire the next generation of students to pursue STEM careers. The Learning Lab allows us to help cultivate the next generation of genetic scientists and strengthen Delaware and our region as a leader in biotechnology.” Education Program Manager Amanda Hewes, MS, developed the Learning Lab after noticing a problem that was undercutting the opportunities of teachers to bring gene editing experiments into the classroom — a lack of space and equipment. Amanda Hewes, education program coordinator, assists students from Wilmington Charter School with their samples of DNA during a Learning Lab experiment. “We don’t want anything to hinder the way students learn about CRISPR gene editing,” Hewes said. “If a student feels like there are too many steps, or a teacher doesn’t have an essential piece of equipment, then we’ve lost an opportunity to bring the next generation of scientists into the lab. We’re striving to break down as many barriers as possible for students.” Learning real-world applications of gene editing The Learning Lab also allows students to speak directly with experts in the field about careers in biotechnology and gene editing as they learn the difference between such things as phenotypic and genotypic readouts in their gene editing experiments. This gives students the chance to ask about the real-world application of genome experiments in a research lab. It also lets them think about their place in a lab setting. “I’ve never been in an actual lab setting before,” said Shiloh Lee, a junior at the Charter School of Wilmington, at a recent class. “I think it is very, very cool to be able to experience it.” “I’ve learned a lot of new skills with the micropipetting,” said Pauline Zhuang, a senior at The Charter School of Wilmington. “We don’t have the same resources at our school. The CRISPR in a Box is such a great resource. My classmates and I have been able to experience, firsthand, what it is like to actually do gene editing.” Through the program, the Gene Editing Institute hopes to educate 1,000 students by spring 2024. Currently, the lab is on track to engage more than 200 students by the end of the spring 2023 semester. CRISPR stands for Clustered Regularly Interspaced Short Palindromic Repeats, which are the hallmark of a bacterial defense system that forms the basis for CRISPR-Cas 9 genome editing technology. The CRISPR technology enables researchers to modify genes in living cells and organisms and may make it possible to correct mutations at precise locations in the human genome in order to treat genetic causes of disease.
