Find out how sustainable dining at Georgia Southern provides fresh options for students

As more and more people are eating out – the expectations of customers of restaurants to be environmentally friendly are ever increasing. However, operating with a reduced carbon footprint all the while being sustainable and profitable are no easy task.   That’s where Georgia Southern University is making a difference.   The newest restaurant on the Georgia Southern University Armstrong Campus offers diners comfort in knowing that some of the ingredients were grown just a few hundred yards away in the campus’ aquaponics farm in the Sustainable Aquaponics Research Center (SARC). The agriculture and food industry is one of the largest users of water and producers of greenhouse gas emissions, but growing food by using aquaponics, a system of growing produce by using water fertilized by fish, cuts down on both significantly. “SARC produce only travels a quarter mile from where it’s grown,” SARC curator Brigette Brinton said. “Locally grown food offers large advantages in terms of increased sustainability and freshness, and SARC produce is grown organically and using sound ecological principles that minimize water consumption.” Brinton said minimizing emissions and water use does not diminish the quality or taste of the produce. To the contrary, it makes the food taste better because aquaponics produce often has higher concentrations of various compounds that give the foods their flavor, and they are grown in more ideal environments. Brzycki said Georgia Southern wants to expand on using ultra-local, fresh produce and vegetables, as a part of the partnership with the aquaponics farm. “When we consider redesigns of existing or new dining locations on the Armstrong Campus in the future, we want to see how we can incorporate these same principles,” he said. “But for now, Southern Cafe is the flagship unit for the aquaponics partnership, as well as sustainability and healthy eating, of Eagle Dining.” Brinton said she hopes the Southern Cafe will inspire the students, faculty and staff who eat there to make healthier and more sustainable choices in other areas of their lives. “Showcasing local, sustainable produce increases students’ awareness that there are better options, and Georgia Southern is going the extra mile to show them how to start making better choices,” she said. “Each time students see they made a sustainable choice at the Southern Cafe, they’re more likely to choose sustainable options on their own.” Are you a journalist looking to cover this story or learn more about how Georgia Southern University is developing new programs that help traditional industries adapt to a more sustainable and environmentally friendly business model? If so – then let our experts help with your coverage. Ants and plants, a mutually beneficial relationship

Ant-plant interactions are really common in nature, and while people might most often picture ants as carrying pieces of leaves cut from tropical plants, ant behavior in the Midwest is less appreciated. Moni Berg-Binder, Ph.D., associate professor of biology at Saint Mary’s University, finds ant mediated seed dispersal, called myrmecochory, fascinating and says that the temperate deciduous forests here in North America have many examples of plants that engage with the native plant community. “In myrmecochory, these plants, often spring ephemerals, which are early blooming spring plants, produce seeds with a nutritious structure that sticks off the seed called an elaiosome,” she said. “Typically what happens is the seeds fall to the ground which is called primary dispersal. The Ants forage and find the seeds on the ground and then pick up seeds and carry them to their nest. This is secondary dispersal. Then, once they get the seeds into their nests, those seeds are brought to places where developing larvae eat the elaiosome. But the seed is unharmed.”  From there, she said the seeds are then deposited in a chamber inside of their nests or they may take the seeds and put them in a refuse pile or a garbage dump just outside the nest. Ants, apparently, keep a very clean nest.  And oftentimes the ground soil around ant activity, is elevated in organic matter, nitrogen, phosphorous, possibly moisture — all really good things for plants and essentially the same thing as fertilizer. So the seed flourishes. “It’s a beautiful example of mutualism,” she said. “The seed is taken and has effectively been planted inside this nest with nature’s fertilizer. The win from the ant perspective is that they received food.” Dr. Berg-Binder and her students have focused their research on a plant called bloodroot. Local ants disperse the seeds of bloodroot.  Dr. Berg-Binder became interested in plant interactions while in graduate school when she became intrigued by the win-win scenario of mutualism. For her graduate work, she had been interested in conservation and how invasive species are introduced to a natural area where they did not typically belong. These invasive species can engage in mutualism with native species. She said there is much more studying to be done on the relationship native ants have with both native plants and invasive plants.   Are ants helping the invasive species become more invasive? “They’re a great study system, and I find them really fascinating,” she said. On average, teachers across the U.S. spend approximately $479 on classroom supplies each year, according to a 2018 study by the National Center of Education Statistics. The Institute for Interdisciplinary STEM Education (i2STEMe) at Georgia Southern University is helping reduce this burden for teachers in southeast Georgia with the School Outreach Program, a lending membership program that provides STEM and social studies materials for K-12 classrooms.  i2STEMe, housed in the College of Education, serves as an outreach center for the university, regional educators and the broader community. The School Outreach Program provides STEM and social studies supplies, including consumable and non-consumable materials, equipment, and teaching aids to member teachers, schools and districts. Members can request items and materials that will be delivered to and picked up from their school location. Annual membership for the program can be purchased by entire school districts, schools or individual teachers. The project was recently featured on WTOC 11 where viewers were given a first-hand look at how local teachers and students are benefitting from the program. Experts in the media: Two Mary Washington Professors study selfies and self-objectification

Psychological Science Professors Miriam Liss and Mindy Erchull’s research on selfie behaviors, self-objectification and depressive behaviors in women was recently published in the psychology journal, Sex Roles. Women are given the message that they are valued for their physical attractiveness above other qualities, and the study examines how self-objectification interplays with online behaviors. A study recently published in the journal Sex Roles sheds new light on the relationship between selfie behaviors, self-objectification, and depressive symptoms in women. Since women often receive the message that they are valued primarily for their physical attractiveness, the researchers were interested in exploring how self-objectification was related to online behaviors. “I have been collaborating with Mindy Erchull on issues related to objectification theory for several years. I had also begun to be interested in the effects of social media on people’s experiences and had recently taught a senior seminar on the topic,” explained the study’s lead author, Miriam Liss, a professor of psychological science at University of Mary Washington. “Mindy and I became interested in how objectification relates to experiences with social media — particularly Instagram, which is a platform that is based on posting visual images. Other studies on the topic had largely looked at how feelings of self-objectification can be a consequence of social media. We wanted to look at how self-objectification can change how one behaves when taking and posting selfies.” For their study, the researchers surveyed 164 female students from a public liberal arts university in the Southeastern United States. The survey assessed photo manipulation, average number of selfies, body surveillance, perceived social media deception, and depressive symptoms. Most of the participants reported taking 2-5 selfies before posting one to Instagram, while approximately 5 percent reported taking more than 20 on average. The researchers found that women who took a larger number of selfies before choosing one to post to Instagram tended to have higher levels of body surveillance and more symptoms of depression.  PsyPost, January 12 The article and details of the study are below. They’ve been polling for months in advance in Iowa – and with less than a week to go before Iowans gather to caucus and choose their preferred person to lead the DNC this November, the most recent polling has Bernie Sanders surging and Joe Biden fading in major races and across the country. Polling in Iowa is still tight and shows a four-candidate race between Sanders, former Vice President Joe Biden, Sen. Elizabeth Warren (D-Mass.) and former South Bend, Ind., Mayor Pete Buttigieg, making it clear the first-in-the-nation caucus battle remains anyone’s game. Yet it is also clear that Sanders has a strong chance of coming out on top in Iowa, as well as in New Hampshire, which will vote just a week later. Such a result would make him the clear front-runner and would likely unnerve parts of the Democratic Party uneasy about the progressive independent being their standard-bearer in the fall. Sanders separated himself from the pack in a New York Times-Siena Research poll of Iowa released over the weekend, one of the first to find a clear-cut leader in the Hawkeye State. And a WBUR survey of New Hampshire released this week found Sanders opening up a 12-point advantage over the next closest contender. Sanders surpassed Biden in CNN’s latest national poll, marking the first time Biden has not held the top spot in that poll this cycle. Hacking billionaires and the link between Bezos, Iran and what’s next for America

It’s becoming the ultimate he said/she said between the ultra-rich and world elite. Amazon CEO Jeff Bezos is claiming Saudi Crown Prince Mohammed bin Salman hacked his phone via WhatsApp. The motive seems routed to the murdering of the Washington Post’s journalist Jamal Khashoggi. However, as the billionaires debate and deflect what actually happened, the event should be a warning sign of what could be on the horizon. America is still on guard and expecting retaliation in one form or another from the assassination of General Qasem Soleimani, and online attacks and targeting cellphones could be the preferred method from America’s enemies abroad. “We should expect attacks from Iranian hackers or those sympathetic to their cause who appear to be civilians without nation state sponsorship will hit low level targets on the basis of ideological/national pride,” says Michigan State University’s Thomas J. Holt. “There will likely be nation-state sponsored attacks though it is unclear how quickly they will launch or how effective they may be.” This is an area that is familiar with American military and intelligence circles, Holt further explains. “Historically the U.S. has been involved in cyber-attacks that are able to severely affect Iranian capabilities, such as Stuxnet. Their counterattacks have been less public and seemingly less effective. However, they’ve already begun as with that web defacement against a US government website reported last week that appears to have Iranian ties or origination.” And as America waits and watches... What are the obvious and perhaps not so obvious approaches to breaching American cyber-security that we can expect? Will it be app based? Will the general public be a target or is it in the best interests to hit higher- and more visible properties? Joseph Telfair, DrPH, associate dean of public health practice and research in Georgia Southern University’s Jiann-Ping Hsu College of Public Health, has been appointed to the National Mental Health Advisory Committee (NAMHC). The NAMHC advises U.S. Department of Health and Human Services Secretary Alex Azar and the directors of the National Institutes of Health and the National Institute of Mental Health on all policies and activities relating to the conduct and support of mental health research, research training and other programs of the institutes. “I am greatly honored to have been given this opportunity to serve our profession and represent our college and University on this important national advisory committee,” said Telfair. “The prospect to contribute to decisions over the next several years that will make a difference for multidisciplinary researchers is very much appreciated.” Telfair’s advisory role will pertain to public health research and practice, community-based research, and issues of health inequities and translational research — all areas in which his national and global expertise has been recognized. His appointment runs through September 2023. The Chinese New Year goes on despite the coronavirus. University of Rochester Anthropologist John Osburg says the occasion is about family, feasting, TV, and family stress.

This is typically the busiest travel period in China—if not the world—as millions of people make their way home to celebrate the Chinese New Year, clogging highways, airports, and train stations in the process. As described by Forbes, the country goes into radio silence as more than 1.3 billion Chinese go on vacation at the same time. “It’s been called the largest mammalian migration on the planet, and it always takes place at the Chinese New Year,” says John Osburg, a University of Rochester associate professor in the Department of Anthropology. This year’s celebration may be less than typical, as the country is faced with an outbreak of coronavirus, which has forced the closure of Wuhan, a major port in China, and several other cities. Osburg says, “While I’ve heard from friends in China who are cancelling travel plans, I also have friends who are mostly unconcerned with the threat of the virus.” Osburg spent three years conducting ethnographic research in China, which culminated with his 2013 book, Anxious Wealth: Money and Morality Among China’s New Rich (Stanford University Press). He has also written numerous articles related to China, on such topics as masculinity, consumerism, and state capitalism. His work has provided him the opportunity to observe and understand the week-long Chinese New Year—also known as the Lunar New Year or Spring Festival—which begins this year on January 25. As Osburg explains, it’s a time for families to come together, which accounts for all the travel headaches. And typically, it’s children traveling to see their parents. “One of the more important cultural values in China is filial piety—caring for your parents,” says Osburg. “In order for a lot of young people to make enough money to support themselves, their own families, and their parents, they have to leave their homes in the smaller towns to find better-paying work in big cities.”

What's in a name? Ghoshal finds hiring discrimination persists

New research by an Elon University professor is challenging earlier findings related to hiring discrimination against African American job candidates. A new article by Raj Ghoshal, assistant professor of sociology, addresses a debate over whether employers still illegally discriminate when making hiring decisions, and supports the idea that discrimination persists. His article “Flawed Measurement of Hiring Discrimination against African Americans,” appears in the Fall 2019 issue of the peer-reviewed journal Sociation. In the article, Ghoshal draws upon his own research to argue that earlier claims that employers no longer discriminate have been invalidated, and that if that earlier research was properly interpreted, it means black job applicants need to send out about 50 percent more applications as white applicants to have an equal chance at getting a response. Many experiments in the past 15 years have tested for discrimination by creating two fake identities with equal-quality resumes and applying to the same set of job listings with both identities. Ghoshal's findings address methodological issues in these experiments, some of which have claimed that hiring discrimination based on race has disappeared.  In these previous experiments known as audit studies, “Steven Smith” and “DeShawn Jackson” might apply to the same 1,000 jobs. Researchers then measure how much interest each resume generates. This line of research has generally found that black Americans need to send out significantly more applications than white Americans to get the same number of callbacks. A 2016 study by economists at the University of Missouri-Columbia argued that these studies used overly stereotypical names to signal race in ways that exaggerated their results. The economists conducted their own study using what they considered more realistic names, and found no difference in employers’ response rates by race. But Ghoshal’s work finds significant flaws in the methodology the economists used. The 2016 study had used names like “Chloe Jackson” and “Ryan Washington” for their African American job candidates because the last names Jackson and Washington typically belong to black individuals, while “Chloe” and “Ryan” were purportedly race-neutral. Though the economists are correct to see Washington and Jackson as typically black last names, Ghoshal hypothesized that very few Americans would know this and interpret the names as intended. He therefore conducted a 1,050-person national survey which asked respondents to guess the race of people with the exact names the 2016 study had used. Survey findings show that about 60 percent of people do not interpret the economists’ study names as intended, and frequently see the names as belonging to white individuals. Further, those individuals most likely to make hiring decisions make just as many errors as others. The level of error is sufficient that the 2016 study is not merely invalidated. Rather, its results, properly interpreted, suggest that black job applicants need to send out about 50 percent more applications to have an equal chance of response. Overall, the findings suggest that racial discrimination remains an important concern that individuals, employers, and government should address.
