A look at raw milk's health risks and potential benefits as Trump administration hints at law changes

More than half of U.S. states allow the sale of raw milk directly from farms to consumers, a number that would likely increase if Robert F. Kennedy Jr. – a raw milk advocate – is confirmed to lead the Department of Health and Human Services (DHHS). Kali Kniel, a professor of microbial food safety at the University of Delaware, can discuss the dangers and potential benefits of drinking raw milk. Some have celebrated the legalization of raw milk around the country, claiming it tastes better and has some nutritional benefits. Meanwhile, the U.S. Food and Drug Administration, one of the DHHS agencies Kennedy would lead, cautions against drinking raw milk, which comes directly from cows, sheep or goats and has been banned from being sold across state lines since the 1980s. Concerns regarding raw milk have been elevated as a deadly strain of bird flu is infecting dairy farms around the country. In the following Q&A, Kniel talks about the pathogens that may be present in raw milk, ways to communicate food safety to the public and other topics. Milk and other dairy products that sit on shelves at the grocery store are pasteurized. What does this process involve and why is it important for dairy products? Pasteurization of milk is a process of heating milk and passing it between heated stainless steel plates until it reaches 161 degrees Fahrenheit. It is held at that temperature for around 15 seconds before it is quickly cooled to 39 degrees Fahrenheit. This process is intended to kill the pathogenic bacteria that could make a person sick. How does this process affect milk’s quality and nutritional value? Scientific studies have shown that pasteurization does not significantly change the nutritional value of milk. Unpasteurized milk may have more vitamin C, which does not survive the pasteurization process, but milk is not considered a good source of vitamin C, as it contains less than 10% of the Recommended Dietary Allowance (RDA), the average amount of nutrients it takes to meet a healthy person’s needs. There are no beneficial bacteria in raw milk. Milk (pasteurized or raw) is not a good source of probiotic or potentially beneficial bacteria, so for that consumers should choose yogurt and other fermented dairy products as well as other fermented products. Scientific studies using animal models have shown no difference in how calcium in raw milk and pasteurized milk is absorbed by the human body. Popularity in drinking raw milk is increasing, despite the U.S. Food and Drug Administration advising that it’s not safe to drink. What are the health risks that come with drinking raw milk? Raw milk may contain pathogenic bacteria, including Campylobacter, Salmonella, pathogenic types of E. coli, Listeria and Brucella, as well as the protozoan parasite Cryptosporidium. These are all zoonotic microbes, which means they can be transmitted from animals to humans. Often the animal does not appear ill, so it is not possible to determine if an ill animal is shedding these pathogens in its feces that can contaminate milk. Microbial testing of the finished product and environmental monitoring programs may be helpful, but do not guarantee that the raw milk is absent of these pathogens. Milk can be contaminated with these pathogens from direct contamination with feces or from environmental conditions. Cross-contamination from dairy workers can also happen, even when people are trying their best to reduce the risk of cross-contamination. The likelihood of a disease outbreak occurring associated with a person consuming raw milk is relatively high given that others may also be exposed. Unpasteurized milk will have a relatively short shelf life and may not be available for testing. Following good hygiene practices on the farm and during milking such as biosecurity around the farm, appropriately sanitizing equipment and monitoring the health of animals can reduce the chance of milk contamination, but not eliminate it. There have been numerous outbreaks of illness associated with raw milk as well as cheese made from raw milk. Persons most at risk of illness associated with drinking raw milk include children, in particular 5 years of age and under, individuals aged 65 and over, pregnant women and immunocompromised individuals. It should be noted that all outbreaks of illness associated with raw milk have included individuals under 19 years of age. Children may be most vulnerable, as they cannot voice an opinion on consumption and risk of raw milk if it is in their household. The Center for Disease Control and Prevention (CDC) collects data on foodborne disease outbreaks voluntarily reported by state, local or territorial health departments. According to the CDC from 2013 to 2018 there were 75 outbreaks of illness linked to raw milk consumption. These outbreaks include 675 illnesses and 98 hospitalizations. Most of these illnesses were caused by Campylobacter, shiga-toxigenic E. coli, or Salmonella. An increase in outbreaks has been correlated with changes in the availability of raw milk. For example, between 2009 and 2023, there were 25 documented outbreaks in the state of Utah, which has 16 raw milk retailers licensed by the Utah Department of Agriculture and Food. In all of these outbreaks, the raw milk was contaminated with the bacteria Campylobacter, which typically causes gastroenteritis symptoms like diarrhea and nausea, but may also cause chronic illness, including Guillain-Barré syndrome which can cause paralysis. How likely are these illnesses to happen from drinking raw milk? It is difficult to say. Foodborne illness is often underreported, depending on how severe people’s symptoms are. According to one study, only about 3.2% of the U.S. population drinks raw milk, while about 1.6% eats cheese made from raw milk. But compared with consumers of pasteurized dairy products, they are 840 times more likely to experience an illness and 45 times more likely to be hospitalized. The authors of this work used the CDC’s national reporting system to analyze data from 2009 to 2014. Despite health risks, why do some people still drink raw milk? Some people feel a nostalgic connection to raw milk, and others may feel that foods that are not treated with heat retain certain nutrients and enzymatic activity. I am not aware of any peer-reviewed rigorous scientific studies that indicate the nutritional benefits of consuming raw milk over time, given the risks of potential for illness, combined with a well balanced diet full of healthful food choices. It remains that raw milk is particularly risky for children to consume, as children can get sick from consuming fewer bacterial cells compared to adults. More than 900 cases of highly pathogenic avian influenza — the disease commonly known as bird flu — have been detected in dairy cattle across 16 states, and at least 40 people have been infected with the disease from close contact with dairy cows. Raw milk is being tested for the virus. With raw milk gaining interest among consumers, what are the possible consequences? Does it elevate the risk of bird flu spreading further to people? There remain clear risks of transmission of pathogenic bacteria through consumption of raw milk, and now with the potential for contamination of raw milk with avian influenza, it is even more important that consumers protect themselves by drinking pasteurized milk. The people most at risk right now are those involved with the milking process and in the handling of dairy cattle. So it is important that those individuals be aware of the risks and take appropriate precautions, including hand washing and wearing appropriate personal protective equipment like protective clothing, gloves, face shields and eye protection. As of December, the U.S. Department of Agriculture is requiring 13 states to share raw milk samples so the agency can test for bird flu viruses. How could this testing better help us understand the virus? I think it is very smart that USDA is leading the National Milk Testing Strategy, which will help us understand the extent of infected herds. Surveillance of microorganisms is an important way to assess risk so we can develop appropriate strategies to reduce and control these risks.

Ask an #Expert - Is there any way to temper America's boiling housing market?

U.S. HOUSING PRICES STILL RISING ALONG WITH MORTGAGE RATES When mortgage rates rise, home prices tend to level off or decline because fewer people can afford to buy. Experts are counting on that adage to help cool the nation’s torrid housing market. But the latest analysis of the most overvalued markets shows prices still are climbing despite the increasing mortgage rates, which last week reached their highest level in more than three years. In all 100 markets surveyed by researchers at Florida Atlantic University and Florida International University, buyers continue to pay higher premiums – that’s the difference between where home prices should be based on historical trends and where they are now. Two months ago, Los Angeles, Provo, Utah and other metro areas in the Western part of the country developed “pricing crowns,” an indication that those housing markets could be slowing. But home values have since reaccelerated, prompting concern that a looming downturn in some areas could be worse than expected. “Eventually mortgage rates will slow down home prices, but it hasn’t happened so far,” said Ken H. Johnson, Ph.D., an economist in FAU’s College of Business. “We should not see rapid upticks in prices as mortgage rates rise. It’s that kind of exuberance that led to past housing downturns.” Boise, Idaho is the nation’s most overvalued housing market, as it has been since the researchers first released their rankings last summer. At the end of February, Boise buyers were paying an average price of $513,849, even though historical trends indicate the average price should be $291,389. That 76.34 percent premium is well ahead of No. 2 Austin, Texas (64.80 percent). The full rankings with interactive graphics can be found here. Charlotte, North Carolina entered the top 10 overvalued markets for the first time with a premium of 50.14 percent. February’s average home price in Charlotte was $353,106, although a history of past sales suggests that price should be $235,188. “Charlotte’s significant and rapidly growing premium is similar to other Southern metros that are all experiencing fast price appreciation,” said Eli Beracha, Ph.D., of FIU’s Hollo School of Real Estate. “The drivers of this appear to be large population increases in these areas combined with a significant shortage in housing inventory.” Each month, Johnson and Beracha rank the most overvalued housing markets of America’s 100 largest metros, similar to the popular S&P CoreLogic Case-Shiller home price index. Johnson and Beracha incorporate average or expected price changes and provide an estimate of how much a market’s housing stock is over- or undervalued, relative to its historic pricing. The data covers single-family homes, townhomes, condominiums and co-ops. Six Florida metros, led by Lakeland, all rank among the nation’s 25 most overvalued markets with premiums of more than 40 percent. The Miami metro, with a premium of nearly 25 percent, remains the least overvalued market in the Sunshine State. As the U.S. housing market cools, metros with strong population gains and shortages of homes for sale will fare best, although those markets will continue to struggle with affordability, the researchers predict. Metros with flat or falling populations and more available homes for sale could face price declines, making those areas more attainable for young families and first-time buyers. Johnson said consumers could be taking big risks if they jump into the U.S. housing market now. “We are near the peak of the current housing cycle, and you never want to buy near the top of the market,” he said. “Consumers need to pause if their main motivation is to buy because they fear prices will rise even higher. Prices are high now, but they always moderate back toward a long-term pricing trend. In the United States, students take several American history courses throughout their K-12 experience. So, why should students bother to continue taking American history courses in college? For Southern Utah University's Dr. Mark Miller, the answer is simple. “When I teach a history course, I am always looking for ways to point out how an issue or event in the past is relevant to something going on in today's world,” said Dr. Miller. “With this year's presidential election going on there have been plenty of examples to tie into regarding past politics and past political crises we have lived through as Americans.” Dr. Miller has conducted some exciting research that will be published in 2021. His upcoming articles includes: “Polygamy under the Red Cliffs: Women’s Voices and Historical Memory at Centennial Park” in Utah Historical Quarterly, “A River Again: Fossil Creek, Desert Fishes, and Dam Removal in the American Southwest” in Pacific Historical Review, and “‘One Territory, Many Peoples:” Racial and Ethnic Groups and the Development of Arizona Territory” in The Smoke Signal. “I think my work on plural marriage and environmental history shows that history is never dead,” said Dr. Miller. “It reveals that in current debates history is quite important. What happened in the past still informs the present. Since both of these topics are quite controversial today, I think historians provide a valuable service by exposing the history behind debates over allowing polygamy in modern America or whether we should make trade offs in development and water use to preserve unique species. Knowledge of people who practice plural marriage and their religious history as well as the history of preservation efforts toward endangered species is vital to all participants in the debates.” Dr. Mark Miller is a professor of history and the department chair of History, Sociology, & Anthropology at Southern Utah University. Optimizing Expertise in the Higher Education Sector: Southern Utah University

Higher education institutions are amongst the wealthiest knowledge-based organizations when it comes to expert resources. While many of these organizations acknowledge the value of their in-house experts, they often struggle to harness their expertise and communicate their strengths to external audiences. But when higher education institutions do take steps to market their expertise, the payoff is exponential. Here’s how Southern Utah University (SUU) leveraged expertise marketing to celebrate their staff, grow their digital presence and drive close to a 10x increase in media inquiries. Embracing Expertise SUU has been acknowledged as a leading university in the U.S. Most recently, the U.S. News and World Report’s 2019 Best Colleges list ranked SUU as one of the top Regional Universities in the West and the highest-ranked public school in all of Utah. Southern Utah University President, Scott L. Wyatt, attributes these accolades to the people within his organization: “Our faculty and staff have dedicated themselves to creating the best educational experience at Southern Utah University,” said Wyatt. “This recognition acknowledges their success and the wonderful learning community they have created!” In fact, SUU is so proud of their people that their initial motivation for expertise marketing was to show their experts exactly how much they were valued. SUU’s faculty and staff bring a wealth of expertise in their professional disciplines, but they’re also deeply immersed in the university’s culture and surrounding environment – including the region’s breathtaking national parks. With this in mind, SUU set out to celebrate their experts’ professional and personal achievements through expertise marketing. Optimizing Expert Content While SUU had expert content on their website, they didn’t have a great process for structuring, organizing and publishing. “We had an Expert Directory, but it just didn’t have background structure we needed to nimbly change profiles and deliver up-to-date content,” said Kenzie Lundberg, Internal Communications Specialist at SUU. ExpertFile’s Platform gave SUU the tools they needed to manage their content, but they still needed a bit of help optimizing their expertise marketing program. They reached out to our customer success team to see how they could better leverage the ExpertFile tool and implement best practices for expertise marketing. After auditing their digital presence, we identified three main areas for SUU to focus on: Showcasing Faculty with Relevant Stories: While SUU had some expert content on their website, it wasn’t structured in a user-friendly way. ExpertFile suggested that Spotlight posts would help them make their content more accessible and encourage audiences to get in touch with their organization. Unlike a standard blog post, ExpertFile’s Spotlights enable users to connect with experts or media relation teams directly from the post while simultaneously distributing the post to the Associated Press, Dejero and ExpertFile Search. By using Spotlights in multiple areas of their website, SUU would be able to drastically improve their visibility and gain better traction with media outlets. Highlighting Specialized Areas of Expertise within SUU: SUU used the ExpertFile Platform to organize and attribute areas of expertise in their expert profiles, but our audit revealed that the topics needed to be more specific to garner audience engagement. ExpertFile recommended that SUU add areas of niche expertise to their expert profiles. For example, a biology professor might list topics like “Invertebrate Evolution” or “Cardiovascular Physiology” in addition to the term “biology.” This optimization would make it easier for audiences like journalists and media outlets to find experts on specific topics. Expanding SUU’s Digital Footprint: One of the key advantages of the ExpertFile Platform is how easy it is for organizations to improve their digital presence. For example, the ExpertFile Design Lab allows marketers to quickly create, publish and manage Expert Directories and Spotlights across various pages on their website (click links for examples). To help SUU better utilize this feature, we suggested linking to their Expert Directory and Spotlights directly from the homepage. This would make it easier for audiences to find their expert content and increase opportunities for engagement.  SUU’s Results SUU took the ExpertFile Customer Success team’s advice and their results reflected just how valuable expertise can be to the bottom line. From Q1 in 2018 to Q1 in 2019, SUU went from 3,030 views and 12 media inquiries to 11,949 views and 115 media inquiries. And their success didn’t end there. SUU’s latest analysis of their expertise marketing program revealed some truly impressive results: CALmatters Feature: David Berri, professor of economics, was requested for an interview on equal pay in sports in September 2018. From the interview and stories that followed, SUU received the equivalent of $112,500 in publicity value and 25.3 million unique views. The State Journal Feature: Michael Mower, executive director of SUU Aviation, was asked to be featured in a story highlighting SUU’s partnership with Marshall University in March 2019. The story was published on The State Journal’s website and had the potential to be seen by 800,000 unique visitors. Qualtric’s X4 Conference: Ravi Roy, assistant professor of political science, was asked to join the ranks of the visionaries and leaders behind the world’s most iconic organizations and present at the 2019 X4 conference. Other presenters included President Barack Obama, Oprah Winfrey, and Sir Richard Branson.
